错误应对：
1、服务生：“嗯?”回了一下头，又转过脸点菜去了。客：“生炒菜心里有头发。”
2、服务生：“请等一下，马上帮你换。”等到为邻桌的客人点完菜后，才将有头发的菜端走。已经过了一会儿。
3、服务生：不怎么发自内心的说：“让您久等了。”端来一盘新的。
问题诊断：
看到这样的对话时，相信很多人都会大为恼火了，所以服务员怎么应对这也是一种技巧。饭菜中有异物往往是引起纠纷的原因之一，如饭里有小砂石等，这些小问题客人不满不会怎么表现出来，但像苍蝇、蟑螂和玻璃碎片等，这些就难以忍受而要抗议了。发现了一个问题，就应想到也许还有很多没有发现的问题，烹调时就必须注意了。那么，针对上面错误的应对方法，服务员应该怎么做呢?
服务策略：
遇到这种情况发生，一定要保持温和态度，听完客人的投诉，第一时间做出合理的道歉;为客人重新换到新菜，或者为他的这顿餐费打个折扣，或者赠送酒店的小礼品;如果客人不依不饶，就向上级申请下，能否退菜。
正确应对：
服务员一：收到投诉时必须马上处理。服务员虽然正在给其他客人点菜，但应迅速着手处理客人的不满，点菜可以请其他服务生代替。有异物的食物令客人不悦，一直放在眼前，只会惹客人更生气，请尽快将它端走，同时向客人道歉。
